Ingredients
  • 4cups cubed Kent pumpkin
  • 2tablespoons olive oil
  • 1/4teaspoon salt
  • 1/8teaspoon pepper
  • 2 packets plain tortilla chips175g each
  • 1 can black beansrinsed and drained, 400g
  • 1 jar salsa
  • 3cups shredded cheese
  • Optional toppings: coriandersliced green shallots and hot pepper sauce
Instructions
  1. Preheat oven to 180c. Place pumpkin in a greased 15 x 10 x1-in baking pan.
  2. Drizzle with oil; sprinkle with salt and pepper. Toss to coat.
  3. Roast until tender, 25-30 minutes, stirring occasionally.
  4. Reduce oven setting to 160c. On a greased 15 x 10 x 1-in. baking pan, layer half of the chips, beans, pumpkin, salsa and cheese.
  5. Repeat layers.
  6. Bake until cheese is melted, 8-10 minutes. Add toppings of your choice; serve immediately.
